Hawaiian Pizza

I've never been a huge fan of Hawaiian pizza. But last week in Cedar Falls we went to a pizza place called Doughy Joeys where I ordered a Hawaiian pizza that also had mandarin oranges on it. I loved it, and wanted to create it at home.

Here's what I did:

For the sauce, I mixed some store bought sauce with some olive oil, oregano, crushed red pepper and  a spoonful of juice from the pineapple and mandarin orange cans.

I put it over a fire roasted thin, square crust from Target. I threw on some Canadian bacon, pineapples, oranges and some green olives and topped it with mozzarella. 

It turned out pretty good! I would've used green peppers instead of olives, but I was fresh out.  Here's the final product:

Pacino Post

Here are some more photos of P's birthday and some others in honor of him turning the big 1.


He bit me pretty hard--apparently he didn't like his hat. This is still bruised.


His birthday present was getting to drink out of (and splash around in) the toilet. He loves it.


Also gave him a few treats.


He wasn't a super fan of the hat...




Thennnnn, he tipped this shelf over. I was not a happy mama.


But how could a person stay mad at this face?


He likes to pass out on the coffee table.


He has luckily stopped trying to drink my milk, but he likes to be very near to me at breakfast time.

Wednesday, Wednesday



Went on a lovely bike ride this evening. It is absolutely gorgeous outside. This tree was too pretty to pass up. Glad I get to go be outside for another hour at Volleys!



When I got home, P and I shared a bottle of water. Well, I had a bottle, he had a capful! 


Since I can't do a pull-up, my pull-up bar hangs in the closet. From it hang my two favorite hats. It's gotta be good for something.

Well, it got up to 95 degrees outside and 81 inside today. Pacino was just trying to cool off...

Energy, Food & Heat


Carth gave me these energy beans to try out yesterday before our workout. My gallbladder started hurting about halfway through...I couldn't fall asleep until after midnight last night though, and I had a lot of energy at volleyball for some reason. Blame the beans.



Last night Katie gave me this scone she made. It's a skinnygirl recipe, so we decided it was okay to eat. Had it for breakfast and it was delicious. 


I was glad for such a tasty treat because I woke up screaming this morning, not because of my gallbladder, but because I slept wrong on my neck. I had to pick my head up with my hands today and it took me about 7 minutes to get out of bed. Again, my heating pad is one of my prize possessions.


Cheerios seem to be a food I can eat right now, so I've been stuffing my face with them a couple times a day. Cheerios and piles of lettuce. I'm pretty much starving. Could go for a slice of pizza...yummmmm.

Life is Good

I can tell this weekend was great because I have to divide up this post into sections---

First, some Pacino pictures:


I'm sure I'm going to turn into a hunchback in his lifetime. He is always jumping on my back!


I think this is why all my blinds are broken...


Next up, a few pictures from Lindsay's birthday:


The restaurant had grasshoppers--my favorite. They are hard to find! Tastes just like a creme de menthe square. Yum.


We ate at a place called Short's in Iowa City. Their food is all named after towns and counties in Iowa. There was a Colo burger, so naturally I had to have it. It was awesome! Grilled onions, American and Swiss on rye.


We went to a place called Bubbleology where you rent your own little karaoke room. We got the Mario room. Super fun time.

Stopped for a drink of Absenthe. 


Perfect night to turn 22....er...31.

Next: Sunday adventures. Sunday is my favorite, favorite day. Woke up early (after about 4 hours of sleep), ate oatmeal & strawberries, went to church, out to late breakfast, did some reading, on to Chalk the Walk, long bike ride, and Cinco de Mayo food:


13.5 mile bike ride. Perfect, perfect night.

I bought this super cute necklace at a sweet little shop in Mount Vernon.






I had a slight twist of my ankle last night, and the only thing I had to ice with this morning was this frozen drink. I had to ice again tonight, so I thought I'd just go ahead and drink it :)

Happy Cinco de Mayo. Hopefully my gallbladder doesn't rebel.

Lengthy post...

Playing sand volleyball Mondays, Tuesdays & Wednesdays has clearly cut down on my blogging time. Plus, life just hasn't been too exciting lately. Here are a few pictures to sum up the last few days:



Here is the Lego guitar I built. The programming was hard, so I used the one that someone online had made. It plays different pitches when you slide the "fret" bar and it has a whammy bar, and it only plays when you strum. Pretty cool. And nerdy.


Pacino has an odd obsession with dragging ALL of his toys to his food/water dish.


Still working on my Easter jelly beans. I might cry when they are gone. Only a few bags left. 
(I still can't believe the doctor says my blood sugar is low.)


I had one of each for my Friday treat. I actually got the Starbucks tea on Thursday night, and only because I was at Target. I'm such a Coffeesmith's girl.


I was taking a picture of my first cute toes of the summer. Apparently P thought his were looking good also.


It was so nice having the windows open and giving the cat a distraction earlier this week. He loves laying and looking out at the birds.


I'm pretty sure my cat can fetch better than your dog. I gave him the blue plastic thing off of my new gallon of milk. He promptly returned it to me. Right into my salsa. Seriously! 


Facebook is telling me to celebrate with Lindsay tonight. Check! We are headed to a restaurant in Iowa City that names all their burgers after Iowa towns and Colo is one of them! 


This was me, standing in Target last night, holding up 17,000 different necklaces to this dress and trying to figure out which one I liked better. Thankfully, I was texting them to a friend for help and I got it allllll figured out. 





This one was the winner. I liked the one with the gold chain better, but I didn't think I'd ever really wear it again...silver is more for me.
